Nicholas Brewing Projects is a Minneapolis-based beverage consulting practice founded in 2017, providing expertise in quality management systems, food safety, workplace health & safety, and long-term planning & expansion management.
The focus of the practice is to provide a practical outlook designed to support sustainable, scalable growth at both the operational and leadership levels, with a particular emphasis in training and implementation programs. This approach is specifically intended to bridge the gaps between culture and compliance issues that can impede growth, if not completely derail it.
Gary co-authored the book Food Safety Planning for Craft Brewers with Mary Pellettieri, published by the Brewers Association in 2020. He has delivered numerous presentations on safety, quality, and food safety issues at Craft Brewers Conferences, the World Brewing Congress, and the Master Brewers Association of the Americas.
Gary Nicholas began his brewing career in 1997 with Goose Island Beer Company. Since then, he has worked in every facet of the brewing industry. He joined Bell’s Brewery as the Quality Manager in 2001 and spent 13 years working in a variety of leadership roles, including managing environmental health & safety operations and leading a team of training & professional development specialists. Prior to opening his own firm, Gary spent two years as the Special Projects Manager for Surly Brewing Company.
Gary serves on both the Master Brewers Safety Committee and the Food Safety Committee. He is an instructor for the annual Master Brewers Brewing & Malting and Packaging Technology courses, presenting on Quality Management, Food Safety, and Workplace Health & Safety. Locally, he serves as Chair of the Minnesota Craft Brewers Guild Education Committee and co-chair of the Master Brewers District St. Paul-Minneapolis Scholarship Committee.
